Honey Bourbon Peach Cobbler

We used our luscious Orange Blossom Honey and favorite Kentucky Bourbon to elevate the flavor of this classic Peach Cobbler. 

Ingredients:

  • 1/4 cup honey, gently warmed in the microwave for about 30 seconds to liquify
  • 1/4 cup bourbon whiskey
  • 1/4 cup brown sugar
  • 2 teaspoons cornstarch
  • 1 tablespoon lemon juice
  • 3 cups peeled, sliced peaches (about 6-8 medium sized)
  • 1 cup sifted, self-rising flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup softened butter
  • 1 tablespoon sugar

Directions:

Preheat oven to 375 degrees. In a medium mixing bowl, combine honey, bourbon, and brown sugar. Add the peaches, lemon juice and cornstarch and blend well and pour into a 2 quart baking dish. Sift the flour, sugar, baking powder and salt into a small mixing bowl. Add the milk and softened butter; beat until smooth. Spoon over the fruit. Sprinkle 1 tablespoon sugar over the top. Bake for 40-45 minutes, until top is golden brown.
